The statistics on food waste are surprising – a major amount of food is wasted every day across North America and the world. Food is always a resource – sometimes able to be rediverted for another food use elsewhere or it can always be turned into soil, nutrients of fuel.
An Agricultural Urbanism project endeavours to:
- Minimize waste of edible food by diverting unused food to other uses or markets;
- Divert food-related waste from the landfill for composting, nutrient salvage or biofuel.
